Baked these almond cookies. Everyone’s fav. These will be my last batch of cookies.
almond flour 120g
plain flour 180g
salt 1/4 tsp
baking powder 1tsp
baking soda 1tsp
Combine all the ingredients together. Add in 120-130ml of vegetable oil and combine into a dough. Chill the dough for 30mins. Shape into 8g each. Brush with egg yolk. Bake in preheated oven for 20mins at 180d.
When I saw these cookies baked and posted by Victoria Bakes, I told myself I must bake these for myself. Another add on cookies on my list since I craved for chocolates for a long time.

Love these bite sized cookies.
I piped them out in bite size, which made up more than 50 cookies. Now I doubt they will last till CNY.
To make caramel gula melaka
100g palm sugar, 40ml water
Combine gula and water in a small sauce pot . Simmer till the sugar dissolved. Set aside to cool
25g molasses sugar
1/2 tsp pandan paste
1/2 tsp baking powder
100g plain flour
Sieve the flour and baking powder together. Set aside.
Combine butter and gula melaka. Cream till light. Add pandan paste till combined.
Fold in the flour mixture. Add in 4tbsp caramel gula melaka.
Spoon and pipe. Spread some caramel on top.
Bake in preheated oven at 150d for 15mins.
They are chewy.
They are made from oatmeal and wholemeal flour.
It was unexpected bake. I baked these granola cookies before I went for my jog, while waiting for the rain to stop.
These cookies were finished by Zann and Hub on the same day. I only ate a few though.
125g unsalted butter
80g molasses sugar
2tbsp agave syrup
100g quick oats
100g wholemeal flour
1/2 tsp baking powder
preheat oven to 180d.
Cream butter and sugar to pale and smooth. Add the agave syrup. Mix well. Add in the oats, wholemeal flour and baking powder.
Roll out flat on the baking tray. Bake for 12mins or until golden brown. I cut them into pieces and stored it in the container.
Chinese New Year is only a few weeks away.
And I have not started on any cookies yet. Decided to test these cheesy butter cookies first.
Probably, these cookies are suitable for cheese lovers.
200g unsalted butter
1 egg yolk
50g icing sugar
100g parmesan cheese powder
200g plain flour
25g corn flour
25g milk powder
2tbsp fresh milk
cheese filling : 75g cold butter, 75g icing sugar, 125g grated cheddar cheese, 85g full cream milk, 25g plain flour
Combine butter, icing sugar and egg yolk. Beat until soft.
Add in the flour mixture gradually until well mixed. Add in the fresh milk and mix well.
Cover and set aside dough in the fridge.
Combine all the ingredients for the fillings, to form a dough. Roll them into tiny balls. Wrap cheese fillings with dough balls and shape them accordingly. Bake in preheated oven at 150d for 30mins.
Baked these butter cookies for a friend. Saved some for myself as well.

Finally November! Another one more month before Christmas, my fav!
And my body battery is like going flat easily these days. Need to clear a lot of stuffs in the fridge, some which I bought months ago.
Baked these gluten free cookies, by using soya powder and almond powder. Overall, they tasted nutty, although not as flavourful as butter cookies.
