Carrot Bread


Another 6 days more.

Baked mini carrot bread. Most of  my bakes are going mini these days.


high protein flour 140g 
carrot puree 60g 
water 45g 
egg yolk 15g 
sugar 20g 
salt 1.25ml 
instant yeast 1tsp 
milk powder 10g 
unsalted butter 15g 

Combine all ingredients except butter. Rub in the butter and continue to knead. ** I used my KA mixer to combine. Took me nearly 40 mins to reach window pane stage. Set aside to proof. Shape accordingly. Proof again. Bake in preheated oven for 20mins at 180d.
