Weather turned hazy these few days, and it was so unbearable warm.
Baked this pandan cake loaf for mom who came over last week. I love the light aroma of the pandan and coconut milk smell.
plain flour 190g
baking powder 1/2tsp
coconut milk 130g
pandan paste 1tsp
Whip A until light and fluffy.
Sift B and fold into the egg mixture. Mix with spatula until well blended.
Place C over double boiler, cook until butter melts. Stir into the above mixture. Mix until well combined.
Pour batter into the loaf tin and sprinkle some desiccated coconut on top. Bake at 175d for 30mins.
