unsalted butter 100g (soften at room temp)
sugar 20g (I used molasses sugar)
icing sugar 15g
low protein flour 115g (I used cake flour)
egg 30g
lemon juice 1ts (I omitted)
lemon zest from one lemon
salt 1/4 1ts
Combine butter and sugar well. Add in icing sugar and salt. Beat till the mixture turns pale. Add in egg bit by bit until well combined. Add in lemon juice and fold in sifted flour. Mix in the lemon zest. (I added some lavender also) Pipe out the batter onto the tray. Bake in preheated oven at 180d for 10-12mins.
