Cheese Fruit Cake 杂果乳酪蛋糕



Recipe (adapted from 䓱老师 的 Perfect Cheese)

used 7″ cake tin

butter 130g
cream cheese 200g
castor sugar 200g (I reduced to 150g) 
grated lemon rind 2tsp (I omitted) 
eggs 4
plain flour 250g
baking powder 5g
mixed spices 1/2 tsp
parmesan cheese 10g ( I added 20g) 
mixed fruits 350g  (I added 200g) 

Line a 18cm cake tin with caking paper. Preheat oven to 160d.

Beat butter, cream cheese, sugar and lemon rind until creamy. Add in eggs, one at a time, beating well after each addition.

Sift flour, baking powder and mixed spices. Fold into butter mixture together with parmesan cheese and mixed fruits to form batter.

Spread batter into prepared cake tin. Bake in oven for 45-60mins or until cooked.  (I baked for 60mins)
