Rye Bread


Hub loves this bread. I baked a mini version for breakky. 


high protein flour 100g
rye flour 100g
instant yeast 3g
salt 3g
water 120g

First proof for 40mins at 30d.

Roll and shape. Rest 20mins. Dust some flour on top. Proof 2nd time for 30mins at 34d.

Score, spray some water mist. Bake at 220d for 25min.
