Pastry (modified and adapted from here.)
180g plain flour
35g icing sugar
1 egg (lightly beaten)
10g custard powder
90g unsalted butter (cut into smaller pieces)
Combine all the dry ingredients. Mix well. Use fingertips to rub in butter and add beaten egg. Mix to form a dough. Set aside in the fridge for later use.
Filling (modified and adapted from here.)
100g grated coconut (or more to your preference)
1 egg (50g)
1/4tsp vanilla extract
1/2 tsp baking powder
1/2 tbsp plain flour
Heat milk and butter over low fire until butter has melted. Add sugar, egg and vanilla extract and mix well. Add in sifted flour and baking powder. Mix well. Add grated coconut. Remove dough from fridge and press into tart moulds. Spoon in the filling, bake at 180C for 25mins.
