Charcoal cheese bread


Recipe (adapted from 原味)

bread flour 250g
german high fibre flour + semolina flour 50g
instant yeast 1/2t
sugar 20g
milk 210ml
olive oil 20g
salt 1/2t
Combine all the ingredients except butter. Rub in the butter and continue to knead until window pane stage. Proof for 1 hour or until size increase to double. Punch in the dough to release the air. Divide the dough into 4 parts, each weigh 130g. Place some cheese cubes (optional) and roll into 25cm long. Proof for an hour or until the size turns double. Place some cheese on top and bake in preheated oven for 20mins at 170C.
