Custard Charcoal Bread


Recipe (Adapted from 跟爱和自由一起做面包)

bread flour 200g
semolina flour 50g
charcoal powder 1tbsp
milk powder 1tbsp
sugar 40g
salt 2.5g
dry yeast 4g
water 120g (I adjusted to 130g)
unsalted butter 25g

Normal straight dough method. Proof for 3hrs in total.  Bake in preheated oven at 180d for 15mins.

To make custard

egg yolk 2
sugar 50g
top flour 30g
milk 250g

Mix  egg and sugar in a mixing bowl. Add milk into a sauce pot. Stir in  the egg mixture. Combine with sifted flour. Under small heat, stir until it thickens. Set aside in the fridge for later use.
