Thanks to a friend whom I know from a baking group. I learnt to use semolina flour to make bread. Was happy how this bread turned out. Soft even on the next day. I added a lot of water until so sticky to knead. Took me nearly 30mins to reach to window pane stage. I left the bread to proof for 8 hrs plus.
70% french flour
15% semolina flour
15% multi grains and high fibre flour
dust with oats
