Pineapple Banana Cake

The cake texture is moist, think due to the banana and pineapple added. Baked this cake for Zann to bring along to her friend’s house tomorrow.

 

Recipe (adapted from In Love with Pandan)

Ingredients A
190g plain flour
1ts baking powder
1/2 ts baking soda
70g castor sugar

Ingredients B
250g banana (peeled and mashed)
50g walnuts (I omitted)
350g pineapple flesh (diced finely)
2 eggs
110g butter (melted)
1/4 tsp pandan paste

Sift ingredients A in a mixing bowl and set aside. Combine ingredients B in another bowl and fold in ingredients A. Pour batter into a greased or lined loaf pan and bake in preheated oven at 180C for 25mins.
