Make these healthy cookies for Baby Ian on last Friday and he likes them. I made half with chocolate chips for the adults. 🙂
Recipe (adapted from two peas and their pod)
198g wheat flour
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
3/4 tsp cinnamon powder
1/4 cup coconut oil
97g light brown sugar
3/4 cup pumpkin puree (steamed and mashed)
3/4 cup chocolate chips
Preheat oven 180C.
Line parchment paper in the baking tray. Whisk flour + salt + baking soda + baking powder + cinnamon powder. Set aside.
Use electric mixer combine oil and sugar. Blend well.
Add vanilla extract and pumpkin, mix for 3mins.
Stir in the dry ingredients. Mix well.
Mix in the chocolate chips.
Bake for 10-12mins.
Note: these cookies are not the crunchy types, they hv the chewy texture.
