Baked this honey oatcake at late night. I use spelt flour to replace the cake flour from the recipe. It worked. I added honey instead of maple syrup. Again, can’t let baby Ian try. Too sweet for him. It’s also not recommended for baby to take honey. I will bake again for the boy.
Hub and I love oats . This cake is filled with chunky bits of walnuts, scented by the honey smell. So is quite filling for the tummy. Hub and I had one each for breakfast the next day.

A. rolled oats 30g honey 30g
B. unsalted butter 140g honey 6thsp yolk 35g spelt flour 130g baking powder 1/4 tsp walnut, toasted 70g
Mix oats and honey, set aside. Combine melted butter with honey, use electric beater to beat till mixture blends well. Add yolk one by one, increase mixer speed and mix well. Fold in sifted flour with baking powder. Add walnuts and mix well. Fill batter into cups 70% and fill toppings with oats. Bake in preheated oven, 180C for 25mins.
